This Thai stir-fry recipe uses chicken, Thai basil, and chili peppers. The key ingredient in this dish is, of course, Thai basil, which has a slightly anise-y flavor that goes well with the other ingredients.

What You Need:

  • 225g / 7oz chicken thigh filets, skinless boneless, cut into bite-size pieces
  • 1 green onion, cut into 4cm / 2″ lengths.
  • 1 cup Thai basil leaves, loosely packed (Holy Basil if you can find it)
  • 2 garlic cloves, large, finely chopped
  • 1 birds eye or Thai chili, deseeded and finely chopped
  • 1 1/2 tbsp oil (peanut, vegetable, or canola)
  • 2 tsp oyster sauce
  • 1 tsp light soy sauce
  • 1 tsp dark soy sauce (or all-purpose)
  • 1 tsp sugar
  • 2 tbsp water

Thai Stir Fry Recipes: How to Make It:

  • Put Sauce ingredients in a small bowl and mix to combine.
  • Heat oil in a wok or pan over high heat.
  • Add garlic and chili and cook for 10 seconds.
  • Add the white part of the green onions and chicken and fry until cooked, around 2 minutes.
  • Add Sauce and cook for 1 minute until the water reduces to make a thick glossy sauce.
  • Toss through the green part of green onions and basil leaves. Stir until just wilted, then serve immediately with steamed jasmine rice.

Thai Noodle Stir Fry (Pad Thai)

Of course, our list of Thai stir fry recipes would not be complete without the famous, Pad Thai. Pad Thai is one of the world’s most cherished noodle dishes. It is a Thai dish made with rice noodles, protein (usually shrimp or chicken), eggs, and vegetables.

This Thai stir fry recipe is flavored with fish sauce, tamarind paste, and chili peppers.

What You Need:

  • 125 g / 4oz Chang’s Pad Thai dried rice sticks
  • 1 1/2 tbsp tamarind puree 
  • 3 tbsp (packed) brown sugar
  • 2 tbsp fish sauce 
  • 1 1/2 tbsp oyster sauce 
  • 2 – 3 tbsp vegetable or canola oil
  • 1/2 onion, sliced (brown, yellow)
  • 2 garlic cloves, finely chopped
  • 150 g/5oz chicken breast (or thigh), thinly sliced
  • 2 eggs, lightly whisked
  • 1 1/2 cups of bean sprouts
  • 1/2 cup firm tofu, cut into 3cm / 1 1/4″ batons
  • 1/4 cup garlic chives, cut into 3cm / 1 1/4″ pieces
  • 1/4 cup finely chopped peanuts

How to Make It:

  • Place the noodles in a large bowl and cover them with boiling water. Soak for 5 minutes, then drain in a colander and rinse quickly under cold water to prevent them from overcooking. Don’t leave them sitting for more than 5 – 10 minutes if possible.
  • Mix Sauce in a small bowl.
  • Heat 2 tbsp oil in a large non-stick pan (or well-seasoned skillet) over high heat. Add garlic and onion, and cook for 30 seconds.
  • Add chicken and cook for 1 1/2 minutes until mostly cooked through.
  • Push to one side of the pan, and pour the egg in on the other side. Scramble using the wooden spoon (add a touch of extra oil if the pan is too dry), then mix into the chicken.
  • Add bean sprouts, tofu, noodles then Sauce.
  • Toss gently for about 1 1/2 minutes until Sauce is absorbed by the noodles.
  • Add garlic chives and half the peanuts. Toss through quickly then remove from heat.
  • Serve while they’re still warm, garnished with remaining peanuts and lime wedges on the side, and a sprinkle of chili if desired (this is the Thai way!). Before serving, squeeze over lime juice to taste.

Thai Fried Rice (Khao Pad)

Now, onto the last Thai stir fry recipe! Thai fried rice is made with jasmine rice, protein (usually chicken, shrimp, or pork), eggs, and vegetables. It’s typically seasoned with fish/soy/oyster sauce and chili peppers.

What You Need:

  • 2 tbsp vegetable oil (or canola or peanut oil)
  • 2 large garlic cloves, very finely chopped
  • 1/2 onion, diced
  • 5 oz / 150 g small prawns/shrimp (cooked or raw), or chicken breast thinly sliced
  • 3 green onion (shallots), cut into 1.5 “/4 cm pieces
  • 2 eggs, lightly beaten
  • 3 cups cooked jasmine rice, cold (preferably refrigerated overnight)
  • 1 1/2 tbsp soy sauce
  • 1 1/2 tbsp oyster sauce
  • 1 1/2 tbsp Thai Seasoning
  • Tomato wedges – Optional
  • Cucumber slices – Optional
  • Fresh coriander – Optional

How to Make It:

  • Heat oil in a large wok or a large skillet over medium-high heat. (Add 1 tbsp extra oil if using a skillet)
  • Add garlic and onion, and stir fry for 30 seconds.
  • Add prawns/shrimp and white part of green onion, and stir fry for 1 minute.
  • Push everything to the side and pour the egg onto the other side. Scramble it quickly – about 20 seconds.
  • Add the rice and Sauce of choice. Stir fry for 2 minutes, adding a green part of green onions halfway through, until all the rice is coated with the Sauce.
  • Garnish this dish with fresh cilantro/coriander, and serve it with tomato and cucumbers on the side.
